Patis
1. Sauté garlic, half of the tinapa flakes and stir in the dissolved Mama Sita’s Palabok Mix. Bring to a boil while stirring occasionally.
2. Lower the heat and simmer until sauce thickens. Remove from heat and set aside.
3. Bring 2 liters of water and 2 tbsp cooking oil to a rolling boil and drop the noodles. Leave for 1 minute or until noodles are cooked. Drain and rinse with cold water. Mix in 1 tbsp of cooking oil to prevent noodles from sticking.
4. Arrange the noodles on a platter lined with banana leaves. Pour the sauce over and garnish with boiled egg, toasted garlic, chicken flakes, chopped spring onions, crushed kropek, remaining tinapa flakes, and calamansi halves.
5. Serve with patis.

The recipe is easy to follow and very delicious. I made some changes to the recipe. I sauted onions with the garlic and this added more flavor to the sauce. I also added crab meat with the shrimp.
I will recommend mama sita's recipe for palabok. I will continue to make this recipe until I will learn it by heart without looking at the recipe.
